Natural vs Dutch-processed cocoa powder: a baker's cheat sheet

Two cocoa powders can look almost the same in the bag and behave like different ingredients in the oven. The variable that separates them is not origin or fat content. It is pH. Natural cocoa powder is acidic. Dutch-process (alkalised) cocoa has been treated with an alkali to lift its pH toward neutral. That single shift changes which raising agent your recipe needs, what colour it bakes to, and how the crumb sets. This is the short, practical reference: what each powder is, when to reach for it, and how to move a recipe from one to the other without a flat, soapy failure.

One thing up front, because it saves confusion later: CocoaFoundry supplies natural, non-alkalised cocoa powder only. We do not sell Dutch-process cocoa. Dutch is covered here as the comparison you need to understand, not as something on our shelf.

The one-line difference

Natural cocoa is the powder left after cocoa butter is pressed out of the bean, milled fine, with nothing added. It keeps its natural acidity, sitting around pH 5.0 to 5.5, on the same acidic side of the scale as buttermilk. It bakes to a warm red-brown and carries a sharper, fruitier cocoa note.

Dutch-process cocoa is natural cocoa that has been run through an alkaline solution, which neutralises much of that acidity and pushes it up toward pH 7 or beyond. It bakes darker and more neutral, and its flavour reads smoother and mellower. Heavily alkalised "black" cocoa is genuinely alkaline and near-black.

Everything a baker needs to decide follows from where the powder sits on that pH scale.

Why the raising agent has to match

This is the part that actually breaks bakes, so it is worth understanding rather than memorising.

Chemical leavening is an acid-base reaction. Baking soda is a pure base. It only produces the gas that lifts a batter when it meets an acid and gets wet and warm. Baking powder is baking soda with a dry acid already blended in, so it can work on its own.

Natural cocoa brings its own acidity to the mix. Recipes built around natural cocoa usually pair it with baking soda, because the cocoa itself supplies the acid the soda needs to react. Get the ratio right and you get a clean, even lift.

Dutch cocoa has had that acidity stripped out. Drop Dutch cocoa into a soda-leavened recipe and there is little acid left for the soda to react with. The rise stalls, and any unreacted soda leaves a soapy, metallic edge and can dull the crumb toward a muddy colour. Recipes built for Dutch cocoa lean on baking powder instead, which carries its own acid and does not depend on the cocoa.

That mismatch, natural cocoa's acidity against the wrong raising agent, is the single most common reason a chocolate cake comes out flat, dense or faintly soapy.

How to swap one for the other

You can move a recipe between the two powders. You just cannot do it as a straight one-to-one swap and leave the leavening alone. The powders are interchangeable in flavour and colour terms; they are not interchangeable in chemistry.

Recipe calls for Dutch, you only have natural: you have added acid the recipe did not expect. The rough correction is to swap some or all of the baking powder for baking soda, since your cocoa is now supplying acidity. A common rule of thumb is that for every three teaspoons of baking powder removed, you add about one teaspoon of baking soda, then rebalance the rest with an acid or liquid. Treat that as a starting point to test, not a guarantee, because it depends on the rest of the formula.

Recipe calls for natural, you only have Dutch: you have removed the acid the soda needed. Either switch the baking soda to baking powder, or add a small amount of an acidic ingredient (a little cream of tartar, lemon juice or buttermilk) to give the soda something to react with.

The safe habit at production scale: do not improvise the swap on a batch you are selling. Adjust the leavening, bake one test, check the rise and the crumb, then commit. The correction is small, but it is not optional.

Which one your recipe actually wants

Work back from what the recipe is asking for.

  • Reach for natural cocoa when the recipe leans on baking soda, when you want a brighter, more acidic, fruit-forward cocoa flavour, and when a warm red-brown colour is the target. If you are building from scratch and want the cocoa's own character to carry, natural is the more expressive powder.
  • A recipe was written for Dutch cocoa when it uses baking powder as the main raising agent, when it wants a dark, neutral, mellow chocolate note, and when near-black colour is the point.

Neither is better. They are two tools with different chemistry. The mistake is treating them as one ingredient in two bags.

Why consistency is the hidden variable

Whichever way a recipe leans, the number that quietly wrecks a production line is drift. A natural cocoa powder that moves in pH or fat content from one delivery to the next will shift your rise, colour and crumb even when your recipe has not changed a gram. You end up chasing a fault in the method that is really a fault in the ingredient.

FAQ

Can I use natural and Dutch cocoa interchangeably?
Not without adjusting the leavening. Natural cocoa is acidic and pairs with baking soda; Dutch is neutral to alkaline and pairs with baking powder. Swapping one for the other with no change to the raising agent is the most common cause of a flat rise or a soapy off-note. Rebalance the leavening and the swap works.

Which cocoa powder do I use with baking soda?
Natural (non-alkalised) cocoa powder. Its natural acidity is what activates the baking soda. If a recipe uses baking soda as the main raising agent, it was almost certainly written for natural cocoa.

Why is my chocolate cake dense and not rising?
Usually a mismatch between the cocoa's pH and the raising agent. A soda-leavened recipe made with Dutch cocoa has too little acid to activate the soda, so it stalls. Cocoa solids and cocoa fat also add weight, so heavy chocolate bakes need enough leavening to lift that extra load.

Does natural cocoa make a lighter-coloured cake?
Yes. Natural cocoa bakes to a warm red-brown; Dutch cocoa bakes darker and more neutral because alkalinity shifts the pigment. Adding more natural cocoa deepens flavour but will not produce the near-black colour of heavily Dutched cocoa.
